Kabkaban Festival is in conjunction with the fiesta of St. Catherine of Alexandria, the town's patron saint. It is a cultural catalogue of the town's historical past. Among the highlights of the festival which was named after Carcar's old name Kabkab which is a kind of fern, is the street dancing and parade.

Long before the chicharon, Carcar had been known for its 'ampaw'. As a child way back 60 years ago, I could remember buying ampaw from street hawkers as the bus I am riding on took a short stop in the town's rotunda.
